Prep Time: 10 minutes
Cook Time: 40-60 minutes
Preheat oven to 350 degrees. In a small bowl combine all dry spices. Coat roast pork with olive oil and then coat the roast with a good layer of rub. This will seal in the juices! Roast until a meat thermometer reads 160 degrees. Allow roast to rest 20 minutes on a rack before slicing. Serve with pear stuffed squash and apple sauce!
