Cover a large baking sheet with tinfoil and spray with cooking spray. Heat olive oil in a skillet, and cook onions until translucent, 15 minutes or so. Meanwhile, in a large bowl, mix meats together until until well combined. Add the onion and the rest of the ingredients to the meat mixture and mix well. Cover and chill for an hour or two. Preheat oven to 425 degrees.

Form meat mixture into balls about 1.5 inches - 2 inches. Place on baking sheet. Using an ice cream scoop is a good option, but if using your hands, wet them. Keeps the meat from sticking your hands! Bake at 420˚ for 30 - 45 minutes depending on size. Allow meatballs to cool before freezing. Store in a freezer bag until needed.

Drop into Authentic Italian Red Sauce for 20 minutes before serving.
