In a large dutch oven or heavy pot, brown the meat with the onions and garlic. Add the chopped tomatoes and the kidney beans. Mix in the seasonings. Cover and simmer for 1 hour. Serve with grated cheddar if desired and crusty buns. A cold beer wouldn't hurt either!

This recipe freezes well.
