No Bake Chocolate Mint Pie

How to:

In large mixing bowl, cream butter and sugar. Melt chocolate over low heat or in microwave in 1 minute increments until melted. Allow to partly cool. Slowly add chocolate and eggs to butter mixture and beat at high speed until fluffy. Add vanilla and peppermint and mix until combined. Pour into pie shell and refrigerate for 24 hours. Serve with whipped cream and chocolate curls (if using).
