Canadian Blue Salmon
This is a fancy presentation plate, and the length of the salmon fillet will depend on how many you are serving. If the boss is coming to dinner, this salmon is dressed to impress!!

Preheat oven to 375˚.

In a non-stick frying pan, sauce the bacon, onion and garlic for 7-10 minutes, until the onions are translucent and the bacon has started to brown. Add pears, wine, maple syrup, savoury, and salt and pepper to taste. Remove from heat and add French bread cubes.

On a baking sheet lined with parchment paper, lay out the first salmon fillet. Spread a thin layer of baby spinach and spoon pear mixture on top. Top with a thin layer of blue cheese and cover with the second salmon fillet. Brush the top with maple syrup. Bake uncovered for approximately 30 minutes. Remove and sprinkle top with sliced almonds and return to oven an additional 10 minutes, until almonds have browned.

Slice and serve with Rice Pilaf and herb roasted vegetables.
